Sheet Pan Wild Salmon with Roasted Baby Potatoes & Burst Tomatoes

Wild salmon is one of the year's most anticipated seasonal catches, prized for its vibrant colour, rich flavour, and naturally firm texture. Paired with buttery baby potatoes, sweet roasted tomatoes, fresh dill, and golden roasted garlic, this effortless sheet pan dinner celebrates the very best of salmon season while it lasts.

Sheet Pan Wild Salmon with Roasted Baby Potatoes & Burst Tomatoes – Serves 4

Everything you need for an elegant seasonal dinner that's ready in under 40 minutes.

Ingredients

1 side wild Pacific salmon (approximately 1–1.5 lb)

1 lb baby potatoes

1 vine cherry tomatoes

1 whole head garlic, halved crosswise

3 cloves garlic, thinly sliced

1 lemon, sliced

2 tbsp unsalted butter, melted

2 tbsp olive oil

2 tbsp fresh dill, chopped, plus extra for garnish

2 tbsp sliced almonds

Salt and freshly cracked black pepper

Lemon wedges, for serving

Instructions

Prepare the potatoes

Preheat the oven to 425°F. Toss the baby potatoes with 1 tablespoon olive oil, half of the chopped dill, salt, and pepper. Spread onto a parchment-lined baking sheet and roast for 20 minutes.

Prepare the salmon

Pat the salmon dry and place it on the baking sheet alongside the potatoes. Arrange the cherry tomatoes, lemon slices, and halved garlic around the salmon.

Season the salmon

Brush the salmon with the melted butter and remaining olive oil. Season generously with salt and pepper, then scatter the sliced garlic, remaining dill, and sliced almonds evenly over the top.

Roast

Return the pan to the oven and roast for 12–15 minutes, or until the salmon flakes easily with a fork and reaches your preferred doneness. The tomatoes should be blistered, and the garlic soft and caramelized.

Finish

Transfer everything to a serving platter. Squeeze the roasted garlic over the salmon, garnish with fresh dill, and serve with roasted lemon slices and fresh lemon wedges.
